I am done with the garden this year. I am tired of weeding, tired of fighting the pests, and tired of coming up with ways to use all of the vegetables it has provided. But since we have an abundance of tomatoes and I cannot let them go to waste I will share the restaurant style salsa I made today. |
- 7 Roma Tomatoes, 5 Large Tomatoes, or 5-6 Cups of Grape/Cherry tomatoes, rinsed with ends cut off. (I used a mixture of grape tomatoes and large tomatoes since it was what I had on hand.)
- 1/2 Large Red Onion
- 1/3 Cup Cilantro, chopped (You can use less if you or not a fan of Cilantro or leave it out all together.)
- 1 Tablespoon Lime Juice
- 1 Jalapeno, seeded (If you would like a spicier salsa leave the seeds in the pepper.)
- 2 Cloves of Garlic minced
- 1/2 Teaspoon Cumin
- 1 Teaspoon Chili Powder
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Stevia
Place all of the ingredients into your food processor or blender and pulse until has reached your desired consistency. Enjoy!
