I love cheese. I love melted cheese. I really love Mozzarealla Sticks. I also love Keto, how it makes me feel, and what it is doing for my body, but Mozzarella Sticks have lots of carbs. No kidding, like about 8 carbs for one stick of melty goodness. The fat is on point for Keto with about 6 grams of fat (over 50% of the about 100 calories come from fat). I tried a couple of recipes that I found online, but I was not impressed so I came up with one that I think is pretty damn good. |
Pork Rinds (I had never eaten a pork rind until I started eating a Keto diet, they are not my favorite thing to eat, but they give you a lot of bang for the bite. One ounce has about 155 calories, 9 grams of total fat, 0 grams of carbohydrates, and 17 grams of protein.)
Shredded Parmesan Cheese
Garlic Powder
Salt and Pepper
Coconut Flour
1 Egg (or more depending on how many Mozzarella Sticks you plan to make)
Heavy Cream

If you need to measure when you are in the kitchen then leave now; this recipe is all done by eyeballing the ingredients and nothing was measured.
In your blender dump in a portion of the bag of pork rinds (I used about half of my bag), a small handful of shredded Parmesan Cheese, garlic powder to your liking, a few grinds of salt and pepper, and about a tablespoon of Coconut Flour. Blend on high until it resembles bread crumbs.
In a bowl whisk one egg with a small pour of heavy cream. You should put just enough cream in so that your egg turns to a light yellow color. (Scientific, I know.)
Cut your cheese sticks in half and then coat each one in the egg mixture.
Transfer each cheese stick into a bowl with your pork rind mixture (make sure to use small batches so that it does not get sticky). Roll the cheese stick until it is nicely coated and then transfer to a plate. Once you have all of your cheese sticks coated and plated, put the plate in the refrigerator for at least an hour (or freeze them in layers with wax paper separating each layer). You can do another layer of your ‘breadcrumbs’ by dipping in the egg mixture again and then back in the crumbs. One layer works great in the air fryer, but two coats is necessary for actual frying.
To cook you can either fry them, bake them, or use an air fryer. I chose to use our air fryer this time, but I fried them the last time I made them and they turned out great. It took about 4 minutes for them to cook in the air fryer, but keep an eye on them and when you see that they are starting to melt they are done. Also, make sure that you line the grate with aluminum foil so that it is easier to remove the Mozzarella Sticks once they are finished cooking.
